The historical development of the notion of Climats across Bourgogne

Where does the notion of Climat come from?
After the Climats of Bourgogne were added on the UNESCO World Heritage list (July 2015), the Bourgogne Wine Board (BIVB) wanted to know more about the notion of Climat, and more specifically its historical development across Bourgogne.
Jean-Pierre Garcia, professor at the University of Bourgogne and specialist of the wine terroirs, along with his team, has conducted a study on this subject in 2016.
